Notes of milk chocolate and caramel create a smooth, rounded foundation, while orange zest adds a gentle brightness that lifts the cup and keeps it vibrant. The result is an espresso that feels approachable yet refined, offering depth and complexity without sacrificing drinkability. Equally satisfying on its own or paired with milk.
Roaster's Description
Located in the renowned Tarrazú region of Costa Rica, Finca Santa Teresa 2000 reflects the dedication and experience of Roger Ureña Hidalgo, a producer whose family has cultivated coffee for several generations.
After taking over the family farm, Roger established his own micro-mill at nearly 2,000 meters above sea level, allowing him to oversee every stage of production, from selective hand-picking to processing and drying. This level of control enables a consistent focus on quality and traceability throughout the entire process.
This lot comes from the El Tono plot, situated at elevations of approximately 1,900 meters and above. The cool mountain climate and natural shade encourage slow cherry maturation, allowing the coffee to develop greater sweetness, complexity, and aromatic depth.
The coffee is processed using the White Honey method, one of Costa Rica's signature processing styles. By leaving a small amount of fruit mucilage on the bean during drying, the process enhances sweetness and body while preserving clarity and balance in the final cup.
Catuai remains one of Costa Rica's most important coffee varieties, prized for its reliability, sweetness, and ability to express terroir with remarkable consistency. In this lot, it delivers a classic and deeply satisfying espresso profile.

Brew It Right
All coffees are sold exclusively as whole beans.
Grinding just before brewing preserves aromatics, structure, and clarity in the cup. For that reason, JONNY does not offer pre-ground coffee.
If you don’t yet own a grinder, consider this your sign. A proper grinder will elevate your coffee more than almost any other tool. (You’ll find a curated selection of hand grinders here.)
In the meantime, make friends with your local barista and ask them to grind the beans for your preferred brew method. They’ll understand.

Freshness, With Intention
Every coffee lists its roast date. I am committed to offering beans at their optimal drinking window. Freshly roasted coffee needs time to rest:
• Filter coffee is typically best starting 7 days after roast.
• Espresso benefits from 10–14 days of rest for balance and stability.
Coffee remains vibrant for several months when stored properly, but for peak clarity and sweetness, I recommend enjoying it within 4 months of the roast date. To maintain high standards:
• Coffees that reach 6 weeks from roast are offered at a reduced price.
• Coffees that reach 12 weeks from roast are removed from inventory.
This ensures that what arrives at your door reflects the level of quality I stand behind.
