Origin, Process, and Tasting Notes

Description

One process. Four completely different coffees.

Often described as the cleanest and most transparent method of coffee processing, the washed process allows origin, variety and producer to take centre stage. This collection brings together four distinct interpretations—from single-origin coffees grown in Rwanda, Honduras and Ethiopia to a seasonal Colombia–Ethiopia blend—revealing an extraordinary spectrum of citrus, ripe fruit, florals, tea-like elegance and comforting sweetness.

Selected to be tasted side by side, these four coffees demonstrate that washed is a process, not a flavor.

The Coffees

ONIBUS — Rwanda Nkara0404

Bourbon · Washed · 200 g · roasted 08/06 · Filter

Elegant and harmonious, with bright mandarin, delicate apricot and the sweetness of brown sugar. As the cup cools, deeper notes of cacao and black tea emerge, creating a refined and beautifully layered expression of washed Rwandan coffee.

ONIBUS — Honduras Feliciano Sabillón

Pacas · Washed · 200 g · roasted 05/06

Delicate and balanced, with soft stone-fruit sweetness, warm walnut notes and a long, pleasantly sweet finish. Smooth and approachable, yet full of subtle detail, it highlights the elegance and gentle character of the Pacas variety.

Onyx — Geometry

Seasonal Colombia & Ethiopia Blend · Washed · 284 g · roasted 23/06 · Omni

Bright, juicy and expressive, with notes of blueberry, fresh lemon and elegant black tea. Built around a consistent flavour profile rather than a fixed recipe, this seasonal blend combines vibrant fruit and remarkable clarity in a coffee designed to shine as both filter and espresso.

Verve — Grateful Dead Cosmic Ripple

Ethiopian Heirloom · Washed · 340 g · roasted 27/05

A luminous Ethiopian coffee with bright citrus, soft stone fruit and delicate floral-tea notes. Produced by Mustefa Abakeno in the Jimma highlands, its washed process and slow shade drying preserve exceptional clarity, creating an elegant cup that remains expressive from hot to cold.

Whole Bean Only

Brew It Right

All coffees are sold exclusively as whole beans.

Grinding just before brewing preserves aromatics, structure, and clarity in the cup. For that reason, JONNY does not offer pre-ground coffee.

If you don’t yet own a grinder, consider this your sign. A proper grinder will elevate your coffee more than almost any other tool. (You’ll find a curated selection of hand grinders here.)

In the meantime, make friends with your local barista and ask them to grind the beans for your preferred brew method. They’ll understand.

Roast Date & Freshness

Freshness, With Intention

Every coffee lists its roast date. I am committed to offering beans at their optimal drinking window. Freshly roasted coffee needs time to rest:

• Filter coffee is typically best starting 7 days after roast.

• Espresso benefits from 10–14 days of rest for balance and stability.

Coffee remains vibrant for several months when stored properly, but for peak clarity and sweetness, I recommend enjoying it within 4 months of the roast date. To maintain high standards:

• Coffees that reach 6 weeks from roast are offered at a reduced price.

• Coffees that reach 12 weeks from roast are removed from inventory.

This ensures that what arrives at your door reflects the level of quality I stand behind.

Returns & Refunds

Coffee Orders

All coffee sales are final. Due to the perishable nature of roasted coffee, returns and refunds are not accepted.

That said, if there is a mistake with your order or your coffee arrives damaged, please email ciao@jonnyroma.com with:

• Your order number

• A brief description of the issue

• Clear photos of the package and product

Any issue will be reviewed carefully and handled as quickly as possible.
