A beautifully balanced Rwandan coffee that combines brightness, sweetness, and elegance in equal measure. Notes of mandarin bring a lively citrus acidity to the cup, followed by the gentle sweetness of apricot and brown sugar. As the coffee cools, deeper layers of cocoa and black tea emerge, creating a profile that feels refined, comforting, and quietly complex. A coffee that rewards patience and invites reflection with every sip.
Roaster's Description
This coffee is part of ONIBUS Coffee's Soil Project, an initiative developed in partnership with small-scale coffee producers in Rwanda to improve long-term soil health and agricultural sustainability.
The project transforms coffee pulp, a by-product of coffee processing, into nutrient-rich organic compost through fermentation with fallen leaves and rice bran. This compost is applied to coffee fields twice each year, helping increase organic matter and stimulate microbial activity within the soil. Research has demonstrated that these practices contribute to healthier and more fertile farmland compared to areas that receive no organic fertilization.
This lot was produced at Nkara Coffee Washing Station, operated by the Dukunde Kawa Musasa Cooperative in Rwanda's Northern Province. The washing station works with local farmers cultivating coffee at elevations between 1,800 and 2,100 meters, where cool temperatures and volcanic soils support the production of high-quality Bourbon coffee.
The Soil Project lot was also selected as the challenge coffee for the Rwanda Coffee Challenge Roast Competition, an annual event created to raise awareness and funding for the initiative. Through projects like this, coffee becomes not only a product of the land, but also a tool for supporting its future.
Rwanda is renowned for producing elegant washed Bourbon coffees, celebrated for their vibrant acidity, layered sweetness, and tea-like structure. This lot is a beautiful example of that tradition while also reflecting a broader commitment to sustainable farming and community development.

Brew It Right
All coffees are sold exclusively as whole beans.
Grinding just before brewing preserves aromatics, structure, and clarity in the cup. For that reason, JONNY does not offer pre-ground coffee.
If you don’t yet own a grinder, consider this your sign. A proper grinder will elevate your coffee more than almost any other tool. (You’ll find a curated selection of hand grinders here.)
In the meantime, make friends with your local barista and ask them to grind the beans for your preferred brew method. They’ll understand.

Freshness, With Intention
Every coffee lists its roast date. I am committed to offering beans at their optimal drinking window. Freshly roasted coffee needs time to rest:
• Filter coffee is typically best starting 7 days after roast.
• Espresso benefits from 10–14 days of rest for balance and stability.
Coffee remains vibrant for several months when stored properly, but for peak clarity and sweetness, I recommend enjoying it within 4 months of the roast date. To maintain high standards:
• Coffees that reach 6 weeks from roast are offered at a reduced price.
• Coffees that reach 12 weeks from roast are removed from inventory.
This ensures that what arrives at your door reflects the level of quality I stand behind.
