An elegant and beautifully layered coffee that showcases the unique character of Peru's Geisha Inca. Delicate notes of black tea form the foundation of the cup, followed by vibrant raspberry and pomegranate acidity that brings energy and complexity. Juicy mandarin sweetness ties everything together, creating a profile that feels both lively and composed. Refined, expressive, and remarkably balanced, this is a coffee that rewards attention with every sip.

Roaster's Description

Drawing on the ancestral traditions of the Incahuasi cooperative, Eudis Orosco and Victoria Atao cultivate coffee in harmony with the Peruvian ecosystem, applying agroforestry practices inspired by Inca agricultural knowledge and guided by the natural cycles of the moon.

Across their two farms, Bella Vista and Finca Paulette, they have helped revive Geisha Inca, a local mutation of the Ethiopian SL9 variety. Once overlooked due to its relatively low productivity, the variety has flourished at high elevations, where it is capable of producing coffees of exceptional elegance and complexity.

Their work is deeply rooted in the community values of Minka and Ayni, traditional concepts centered on collective work and mutual support. Through these practices, generations of agricultural knowledge continue to be preserved while strengthening both biodiversity and the social fabric of the region.

For this lot, freshly harvested cherries undergo a dry fermentation of 24 to 36 hours within their own pulp before being washed. The cool mountain climate helps stabilize and preserve aromatic complexity throughout the process, resulting in a cup that is both vibrant and remarkably transparent.

Geisha Inca represents a fascinating expression of Ethiopian genetics adapted to the Peruvian Andes. Combining floral elegance with vibrant fruit character, it offers a unique perspective on one of the world's most celebrated coffee lineages.

Brew It Right

All coffees are sold exclusively as whole beans.

Grinding just before brewing preserves aromatics, structure, and clarity in the cup. For that reason, JONNY does not offer pre-ground coffee.

If you don’t yet own a grinder, consider this your sign. A proper grinder will elevate your coffee more than almost any other tool. (You’ll find a curated selection of hand grinders here.)

In the meantime, make friends with your local barista and ask them to grind the beans for your preferred brew method. They’ll understand.

Roast Date & Freshness

Freshness, With Intention

Every coffee lists its roast date. I am committed to offering beans at their optimal drinking window. Freshly roasted coffee needs time to rest:

• Filter coffee is typically best starting 7 days after roast.

• Espresso benefits from 10–14 days of rest for balance and stability.

Coffee remains vibrant for several months when stored properly, but for peak clarity and sweetness, I recommend enjoying it within 4 months of the roast date. To maintain high standards:

• Coffees that reach 6 weeks from roast are offered at a reduced price.

• Coffees that reach 12 weeks from roast are removed from inventory.

This ensures that what arrives at your door reflects the level of quality I stand behind.
