A delicate and beautifully balanced Honduran coffee that highlights the elegance of the Pacas variety. Gentle stone fruit notes bring a soft, juicy sweetness to the cup, followed by subtle walnut aromas that add warmth and depth. The texture is smooth and composed, leading to a lingering finish that remains sweet and satisfying long after the last sip. Refined and approachable, this is a coffee that rewards slow, attentive brewing.

Roaster's Description

This coffee comes from El Carbonal, a farm located in the mountains of Santa Bárbara near one of Honduras' protected national parks. The farm is managed by Feliciano Sabillón and his family, whose dedication has helped establish El Carbonal as one of the region's respected coffee-producing farms.

Feliciano's journey into coffee began after inheriting the family farm, transitioning from a career outside the coffee industry into full-time coffee production. Today, he works alongside his wife, Irma Madrid, an accomplished coffee producer and past Cup of Excellence award recipient, as well as their son. Together, the family oversees every stage of production with a focus on quality and long-term sustainability.

At El Carbonal, several varieties are cultivated, including Pacas, Catuai, Parainema, and Geisha. Pacas has earned particular recognition within Santa Bárbara for its ability to produce coffees with remarkable sweetness, balance, and clarity.

This lot reaches ONIBUS through San Vicente, a respected exporter based in Peña Blanca that works with more than 400 producers throughout Santa Bárbara. Beyond exporting coffee, San Vicente provides technical assistance, quality control, cupping support, and moisture monitoring, helping producers maintain exceptional standards from harvest through export.

Honduras has become one of Central America's most exciting specialty coffee origins, and Santa Bárbara remains at the heart of that reputation. With its high elevations, cool climate, and experienced producers, the region continues to produce coffees celebrated for their balance, sweetness, and complexity.

Brew It Right

All coffees are sold exclusively as whole beans.

Grinding just before brewing preserves aromatics, structure, and clarity in the cup. For that reason, JONNY does not offer pre-ground coffee.

If you don’t yet own a grinder, consider this your sign. A proper grinder will elevate your coffee more than almost any other tool. (You’ll find a curated selection of hand grinders here.)

In the meantime, make friends with your local barista and ask them to grind the beans for your preferred brew method. They’ll understand.

Roast Date & Freshness

Freshness, With Intention

Every coffee lists its roast date. I am committed to offering beans at their optimal drinking window. Freshly roasted coffee needs time to rest:

• Filter coffee is typically best starting 7 days after roast.

• Espresso benefits from 10–14 days of rest for balance and stability.

Coffee remains vibrant for several months when stored properly, but for peak clarity and sweetness, I recommend enjoying it within 4 months of the roast date. To maintain high standards:

• Coffees that reach 6 weeks from roast are offered at a reduced price.

• Coffees that reach 12 weeks from roast are removed from inventory.

This ensures that what arrives at your door reflects the level of quality I stand behind.
