One of Costa Rica's most respected coffee producers, Eduardo Ramirez didn't inherit generations of coffee farming - he built his reputation from the ground up. After beginning his career as a quality manager at CoopeLibertad, he went on to establish his own farm in the highlands of Santa María de Dota, where a relentless focus on quality has earned him recognition as a Cup of Excellence judge, Q Grader, and Costa Rica's 2019 National Cup Tasting Champion.

His Gesha reflects the same meticulous approach. Naturally processed to preserve sweetness and complexity, it opens with vibrant citrus before giving way to a rich, buttery sweetness. Notes of dried orange and caramel butter create an elegant, layered cup that feels both refined and comforting, with the floral clarity and silky texture that have made Gesha one of the world's most celebrated coffee varieties.

Roasted for omni, this coffee shines as a filter brew, where its delicate aromatics and nuanced sweetness can be fully appreciated.

Roaster's Description

Eduardo Ramirez is one of Costa Rica's most recognized coffee producers, but his journey began from scratch. As the first generation of coffee producers in his family, he started his career as a quality manager at CoopeLibertad, where he developed a deep understanding of coffee cultivation and processing before purchasing a 20-hectare farm of his own.

Today, after more than ten years producing coffee at elevations reaching 2,100 meters above sea level, Eduardo has established himself as a leading figure in Costa Rican specialty coffee.

Alongside his work with Café Imports, he serves as a judge for the Cup of Excellence, became Costa Rica's National Cup Tasting Champion in 2019, and earned his Q Grader certification. His farm cultivates exceptional varieties including Gesha, SL-28, Villa Sarchí, and Java, each managed with extraordinary attention to detail. Eduardo's philosophy is simple: prioritize quality over quantity.

Every harvest reflects the dedication and precision that have made him one of the country's most respected producers, demonstrating what is possible through the commitment of a first-generation coffee farmer.

Brew It Right

All coffees are sold exclusively as whole beans.

Grinding just before brewing preserves aromatics, structure, and clarity in the cup. For that reason, JONNY does not offer pre-ground coffee.

If you don’t yet own a grinder, consider this your sign. A proper grinder will elevate your coffee more than almost any other tool. (You’ll find a curated selection of hand grinders here.)

In the meantime, make friends with your local barista and ask them to grind the beans for your preferred brew method. They’ll understand.

Roast Date & Freshness

Freshness, With Intention

Every coffee lists its roast date. I am committed to offering beans at their optimal drinking window. Freshly roasted coffee needs time to rest:

• Filter coffee is typically best starting 7 days after roast.

• Espresso benefits from 10–14 days of rest for balance and stability.

Coffee remains vibrant for several months when stored properly, but for peak clarity and sweetness, I recommend enjoying it within 4 months of the roast date. To maintain high standards:

• Coffees that reach 6 weeks from roast are offered at a reduced price.

• Coffees that reach 12 weeks from roast are removed from inventory.

This ensures that what arrives at your door reflects the level of quality I stand behind.

Returns & Refunds

Coffee Orders

All coffee sales are final. Due to the perishable nature of roasted coffee, returns and refunds are not accepted.

That said, if there is a mistake with your order or your coffee arrives damaged, please email ciao@jonnyroma.com with:

• A brief description of the issue

• Clear photos of the package and product

Any issue will be reviewed carefully and handled as quickly as possible.
