Origin, Process, and Tasting Notes

Description

250g bag

Origin: Colombia

Region: Caldono, Cauca

Producer: Patio Bonito

Variety: Typica

Process: Washed

Altitude: 1,700 masl

Tasting Notes: Cooked Apple, Pear, Caramel

Roast Date: 09 May 2026

Roasted for: Omni (ideal for Filter)

A soft and comforting washed Colombian with remarkable sweetness and balance. Notes of cooked apple and ripe pear bring a gentle fruit character to the cup, while caramel adds warmth and depth through the finish. Clean and structured, yet deeply cozy, this is the kind of coffee that feels calm, familiar, and quietly elegant.

Roaster’s Description

Patio Bonito is a family-run farm located in Caldono, Cauca, led by Carlos Arturo Trujillo, who has dedicated nearly five decades to coffee cultivation. Today, he works closely alongside his daughter Paola Trujillo, whose experience as a cupper and buyer in Nariño and Huila has helped push the farm’s quality and processing techniques to new levels.

Since returning to the farm in 2022, Paola has introduced more advanced fermentation approaches, including thermal shock and anaerobic process modulation, refining both washed and natural profiles while maintaining clarity and balance in the cup.

The farm spans 11 hectares, with approximately 47,000 coffee trees across 13 different varieties, including Gesha, Pink Bourbon, SL-28, Java, Sidra, Wush Wush, and Typica.

Beyond coffee quality, the Trujillo family places strong emphasis on soil conservation, food security, environmental stewardship, and farmer education. Their philosophy is simple yet powerful: “The best legacy we can leave to our children is love, knowledge, and a planet in which to live.”

Whole Bean Only

Brew It Right

All coffees are sold exclusively as whole beans.

Grinding just before brewing preserves aromatics, structure, and clarity in the cup. For that reason, JONNY does not offer pre-ground coffee.

If you don’t yet own a grinder, consider this your sign. A proper grinder will elevate your coffee more than almost any other tool. (You’ll find a curated selection of hand grinders here.)

In the meantime, make friends with your local barista and ask them to grind the beans for your preferred brew method. They’ll understand.

Roast Date & Freshness

Freshness, With Intention

Every coffee lists its roast date. I am committed to offering beans at their optimal drinking window. Freshly roasted coffee needs time to rest:

• Filter coffee is typically best starting 7 days after roast.

• Espresso benefits from 10–14 days of rest for balance and stability.

Coffee remains vibrant for several months when stored properly, but for peak clarity and sweetness, I recommend enjoying it within 4 months of the roast date. To maintain high standards:

• Coffees that reach 6 weeks from roast are offered at a reduced price.

• Coffees that reach 12 weeks from roast are removed from inventory.

This ensures that what arrives at your door reflects the level of quality I stand behind.

Returns & Refunds

Coffee Orders

All coffee sales are final. Due to the perishable nature of roasted coffee, returns and refunds are not accepted.

That said, if there is a mistake with your order or your coffee arrives damaged, please email ciao@jonnyroma.com with:

• Your order number

• A brief description of the issue

• Clear photos of the package and product

Any issue will be reviewed carefully and handled as quickly as possible.
