A rare and elegant Colombian microlot from Finca Anaya, nestled in the lush hills of southern Huila. Pacamara Amarillo, a yellow cherry mutation of the more common red Pacamara, offers rounded sweetness, silky texture, and a beautifully distinctive cup profile. Notes of juicy peach, bright lychee, and soft chocolate unfold with precision, supported by vibrant acidity and exceptional clarity.
Refined yet expressive, this is a coffee where fruit, structure, and elegance meet in perfect balance. Roasted for omni, filter is where its aromatic complexity and clean fermentation character are most vividly expressed.

Roaster’s Description
Produced by Sergio Aranda at Finca Anaya, this lot reflects more than thirty years of dedication from the Aranda Gómez family. Located in the biodiverse hills of Acevedo, Finca Anaya is recognized for its meticulous agricultural standards and progressive fermentation work.
The coffee is processed using a washed method with controlled fermentation. After selective hand-picking, the cherries undergo a short whole-fruit fermentation before depulping and a 48-hour submerged fermentation with selected yeasts and a fruit-based pre-ferment. Parameters including pH, Brix, TDS, and temperature are carefully monitored throughout. The coffee is then washed with temperature-controlled water and slowly sun-dried for 8 to 12 days, resulting in a cup of remarkable clarity and sweetness.

Brew It Right
All coffees are sold exclusively as whole beans.
Grinding just before brewing preserves aromatics, structure, and clarity in the cup. For that reason, JONNY does not offer pre-ground coffee.
If you don’t yet own a grinder, consider this your sign. A proper grinder will elevate your coffee more than almost any other tool. (You’ll find a curated selection of hand grinders here.)
In the meantime, make friends with your local barista and ask them to grind the beans for your preferred brew method. They’ll understand.

Freshness, With Intention
Every coffee lists its roast date. I am committed to offering beans at their optimal drinking window. Freshly roasted coffee needs time to rest:
• Filter coffee is typically best starting 7 days after roast.
• Espresso benefits from 10–14 days of rest for balance and stability.
Coffee remains vibrant for several months when stored properly, but for peak clarity and sweetness, I recommend enjoying it within 4 months of the roast date. To maintain high standards:
• Coffees that reach 6 weeks from roast are offered at a reduced price.
• Coffees that reach 12 weeks from roast are removed from inventory.
This ensures that what arrives at your door reflects the level of quality I stand behind.
