Floral aromatics open the cup, followed by juicy notes of peach, passion fruit, and sweet orange. Bright acidity brings energy and clarity, while a syrupy texture creates depth and structure throughout. Delicate yet intensely flavorful, this is a coffee that showcases the remarkable complexity that has made Pink Bourbon one of Colombia's most celebrated varieties.
Roaster's Description
This coffee comes from El Diamante, the farm of Diego Andrade Chambaco in Santa María, Huila, one of Colombia's most renowned coffee-producing regions. Born into a family of coffee farmers, Diego learned the craft from his parents and continues that legacy today while raising the next generation on the same land that shaped his own journey.
Situated between 1,400 and 2,100 meters above sea level and influenced by fertile volcanic soils from Nevado del Huila, the region provides exceptional conditions for producing coffees with clarity, sweetness, and complexity. Stable temperatures and abundant natural resources allow cherries to mature slowly, concentrating flavor and developing distinctive character.
For this lot, only perfectly ripe cherries are selected by hand before being depulped and fermented for 36 hours. The coffee is then dried in a greenhouse for approximately five days, allowing for greater consistency and protection from changing weather conditions. This careful approach helps preserve the delicate aromatics and vibrant fruit character that define Pink Bourbon.
Diego's work reflects not only a commitment to quality, but also the strength of the local coffee community. In recent years, producers throughout Santa María have built stronger collaborative networks, sharing knowledge and supporting one another in pursuit of higher quality and greater resilience. P
ink Bourbon has become one of Colombia's most sought-after varieties thanks to its combination of floral elegance, vibrant fruit notes, and refined acidity. In this lot, it offers a particularly vivid and transparent expression of the variety's potential.

Brew It Right
All coffees are sold exclusively as whole beans.
Grinding just before brewing preserves aromatics, structure, and clarity in the cup. For that reason, JONNY does not offer pre-ground coffee.
If you don’t yet own a grinder, consider this your sign. A proper grinder will elevate your coffee more than almost any other tool. (You’ll find a curated selection of hand grinders here.)
In the meantime, make friends with your local barista and ask them to grind the beans for your preferred brew method. They’ll understand.

Freshness, With Intention
Every coffee lists its roast date. I am committed to offering beans at their optimal drinking window. Freshly roasted coffee needs time to rest:
• Filter coffee is typically best starting 7 days after roast.
• Espresso benefits from 10–14 days of rest for balance and stability.
Coffee remains vibrant for several months when stored properly, but for peak clarity and sweetness, I recommend enjoying it within 4 months of the roast date. To maintain high standards:
• Coffees that reach 6 weeks from roast are offered at a reduced price.
• Coffees that reach 12 weeks from roast are removed from inventory.
This ensures that what arrives at your door reflects the level of quality I stand behind.
