An elegant and deeply expressive coffee that showcases one of Colombia's most intriguing varieties. Juicy pear and lychee bring brightness and sweetness to the cup, while delicate floral aromatics and refined black tea notes add structure and complexity. The texture is silky and composed, with remarkable clarity throughout. Sophisticated without being demanding, this is a coffee that rewards slow attention and highlights the beauty of precision processing.

Roaster's Description

This exceptional micro-lot comes from the mountains surrounding Pitalito in Colombia's renowned Huila region and is produced by Luis Marcelino for Aroma Nativo, a project internationally recognized for its exploration of rare varieties and innovative processing methods.

Cultivated between 1,600 and 1,900 meters above sea level, this lot features Papayo, a rare variety native to Huila. Its name comes from the elongated shape of the coffee cherry, which resembles a small papaya. The variety has become highly sought after for its silky mouthfeel, vibrant fruit character, and elegant complexity.

To further enhance these characteristics, the coffee undergoes a Hydro Honey process, an innovative technique that combines controlled hydro-fermentation with honey-style drying. By retaining a portion of the fruit mucilage during drying, the process develops greater sweetness and depth while preserving exceptional clarity in the cup.

Aroma Nativo was created to showcase the potential of Colombia's lesser-known varieties and processing techniques. Through close collaboration with producers such as Luis Marcelino, the project continues to push the boundaries of quality while remaining deeply connected to origin and terroir.

Brew It Right

All coffees are sold exclusively as whole beans.

Grinding just before brewing preserves aromatics, structure, and clarity in the cup. For that reason, JONNY does not offer pre-ground coffee.

If you don’t yet own a grinder, consider this your sign. A proper grinder will elevate your coffee more than almost any other tool. (You’ll find a curated selection of hand grinders here.)

In the meantime, make friends with your local barista and ask them to grind the beans for your preferred brew method. They’ll understand.

Roast Date & Freshness

Freshness, With Intention

Every coffee lists its roast date. I am committed to offering beans at their optimal drinking window. Freshly roasted coffee needs time to rest:

• Filter coffee is typically best starting 7 days after roast.

• Espresso benefits from 10–14 days of rest for balance and stability.

Coffee remains vibrant for several months when stored properly, but for peak clarity and sweetness, I recommend enjoying it within 4 months of the roast date. To maintain high standards:

• Coffees that reach 6 weeks from roast are offered at a reduced price.

• Coffees that reach 12 weeks from roast are removed from inventory.

This ensures that what arrives at your door reflects the level of quality I stand behind.
