This is the kind of Ethiopian coffee that reminds us why we fell in love with washed coffees from the region in the first place. Bright and beautifully clean, Suke opens with juicy apricot and delicate jasmine before finishing with the sparkling sweetness of candied lemon.
Floral, vibrant and incredibly refreshing, with plenty of clarity in the cup. A coffee that feels effortless to drink but has more than enough complexity to keep you paying attention.
Roaster’s Description
Selected in Ethiopia in February, Suke is a celebration of the brightness, clarity and sparkling character that a great washed Ethiopian coffee can deliver.
The coffee comes from the Haru area, where wild and cultivated coffee trees form an important part of both the landscape and the local economy. The region has also played an important role in Project Origin’s work in Ethiopia: its washing stations were among the first where the team experimented with and refined its Carbonic Maceration techniques before expanding them to other stations.
For this washed lot, the focus is firmly on the natural character of the coffee itself: a vibrant and expressive cup bursting with apricot, jasmine and a sweet candied-lemon finish.

Brew It Right
All coffees are sold exclusively as whole beans.
Grinding just before brewing preserves aromatics, structure, and clarity in the cup. For that reason, JONNY does not offer pre-ground coffee.
If you don’t yet own a grinder, consider this your sign. A proper grinder will elevate your coffee more than almost any other tool. (You’ll find a curated selection of hand grinders here.)
In the meantime, make friends with your local barista and ask them to grind the beans for your preferred brew method. They’ll understand.
Roast Date & Freshness

Freshness, With Intention
Every coffee lists its roast date. I am committed to offering beans at their optimal drinking window. Freshly roasted coffee needs time to rest:
• Filter coffee is typically best starting 7 days after roast.
• Espresso benefits from 10–14 days of rest for balance and stability.
Coffee remains vibrant for several months when stored properly, but for peak clarity and sweetness, I recommend enjoying it within 4 months of the roast date. To maintain high standards:
• Coffees that reach 6 weeks from roast are offered at a reduced price.
• Coffees that reach 12 weeks from roast are removed from inventory.
This ensures that what arrives at your door reflects the level of quality I stand behind.
