A decaf that feels anything but compromised. Silky and light on the palate, it opens with delicate fruit sweetness and bright lime before developing into an elegant, tea-like cup. Fresh ginger adds a subtle aromatic lift, while green tea and a soft, milky oolong character create a long, refined finish. Clean, calm, and remarkably precise, this is a decaf with the clarity and complexity of a truly exceptional specialty coffee.

Roaster's Description

This Typica lot comes from Finca Nogales in Bruselas, Pitalito, Huila, where it is grown at 1,900 meters above sea level and processed with the same attention normally reserved for competition-level coffees.

The process begins as a carefully prepared washed coffee. After flotation and selection, the cherries undergo a controlled 24-hour fermentation before being washed and slowly dried on raised beds. The coffee is then hulled and selected again before decaffeination.

Rather than stripping the coffee of the qualities that make it distinctive, the decaffeination process is designed to preserve its sweetness, clarity, and texture. The beans undergo repeated immersions in hot water to extract the caffeine before resting for 24 hours in mosto, a naturally derived solvent produced from coffee pulp or husk.

Following a thorough wash, the coffee is dried again for approximately five days, allowing it to regain stability and balance. The result challenges what we expect from decaf.

Typica gives this lot a lighter, more lifted expression, with delicate white peach sweetness and a silky, milky oolong-like structure that continues to unfold as the coffee cools. Aromatic, precise, and beautifully composed, this is a coffee made for anyone looking for the experience of an exceptional specialty coffee - just without the caffeine.

Brew It Right

All coffees are sold exclusively as whole beans.

Grinding just before brewing preserves aromatics, structure, and clarity in the cup. For that reason, JONNY does not offer pre-ground coffee.

If you don’t yet own a grinder, consider this your sign. A proper grinder will elevate your coffee more than almost any other tool. (You’ll find a curated selection of hand grinders here.)

In the meantime, make friends with your local barista and ask them to grind the beans for your preferred brew method. They’ll understand.

Roast Date & Freshness

Freshness, With Intention

Every coffee lists its roast date. I am committed to offering beans at their optimal drinking window. Freshly roasted coffee needs time to rest:

• Filter coffee is typically best starting 7 days after roast.

• Espresso benefits from 10–14 days of rest for balance and stability.

Coffee remains vibrant for several months when stored properly, but for peak clarity and sweetness, I recommend enjoying it within 4 months of the roast date. To maintain high standards:

• Coffees that reach 6 weeks from roast are offered at a reduced price.

• Coffees that reach 12 weeks from roast are removed from inventory.

This ensures that what arrives at your door reflects the level of quality I stand behind.
