An elegant and aromatic Colombian Gesha with a delicate balance of fruit, florals, and sweetness. Crisp lime brings a lively acidity to the cup, softened by the juicy sweetness of ripe pear. As it opens, fragrant rose tea adds a distinctly floral character before giving way to a smooth caramel sweetness in the finish. Refined, clean, and beautifully expressive, this is a graceful Gesha with enough structure and sweetness to shine across different brewing methods.

Roaster's Description

Finca La Villa is an eight-hectare farm with more than forty years of history, located in Isnos, Huila, at 1,720 meters above sea level. Today, the farm is managed by Juan Darío Gómez, who has dedicated himself to coffee production from an early age. At just 15 years old, Juan Darío attended a technical course in agricultural production at SENA, Colombia's public vocational education institution, giving him a strong technical foundation for his future work as a coffee producer. Today, together with his family, he combines continuous learning with a strong spirit of experimentation to produce distinctive, high-quality coffees.

For this Gesha lot, only ripe cherries are harvested by hand before undergoing an additional selection through flotation. Once depulped, the coffee undergoes a controlled 24-hour anaerobic fermentation with coffee must. The beans are then dried in the sun for ten days under constant supervision, allowing the coffee to develop stability while preserving its delicate aromatic character. The result is an elegant expression of Gesha, combining bright citrus, delicate fruit, floral aromatics, and caramel sweetness in a cup that reflects both the character of the variety and Juan Darío's precise approach to processing.

Brew It Right

All coffees are sold exclusively as whole beans.

Grinding just before brewing preserves aromatics, structure, and clarity in the cup. For that reason, JONNY does not offer pre-ground coffee.

If you don’t yet own a grinder, consider this your sign. A proper grinder will elevate your coffee more than almost any other tool. (You’ll find a curated selection of hand grinders here.)

In the meantime, make friends with your local barista and ask them to grind the beans for your preferred brew method. They’ll understand.

Roast Date & Freshness

Freshness, With Intention

Every coffee lists its roast date. I am committed to offering beans at their optimal drinking window. Freshly roasted coffee needs time to rest:

• Filter coffee is typically best starting 7 days after roast.

• Espresso benefits from 10–14 days of rest for balance and stability.

Coffee remains vibrant for several months when stored properly, but for peak clarity and sweetness, I recommend enjoying it within 4 months of the roast date. To maintain high standards:

• Coffees that reach 6 weeks from roast are offered at a reduced price.

• Coffees that reach 12 weeks from roast are removed from inventory.

This ensures that what arrives at your door reflects the level of quality I stand behind.
