Deeply fruity and floral, with a little wildness underneath. Ripe blackberry gives the cup its juicy sweetness, followed by a delicate violet perfume and just a touch of wine-like character from the anaerobic fermentation. Complex and expressive without losing its elegance - a distinctly modern take on the floral character we love in Ethiopian coffee.
Roaster’s Description
This lot comes from Chelchele in Yirgacheffe, one of Ethiopia’s most celebrated coffee-growing regions. Grown at elevations between 1,900 and 2,300 metres above sea level, the 74110 and 74112 varieties benefit from the cool conditions and slow cherry maturation associated with these high-altitude landscapes.
Anaerobic naturals have become increasingly prominent in specialty coffee for the intense, fruit-forward profiles they can produce. By combining the sweetness of natural processing with fermentation in a controlled, oxygen-free environment, the method can create coffees with remarkable fruit intensity, layered complexity and floral character.
For this lot, cherries are hand-sorted for optimal ripeness, removing underripe, overripe or damaged fruit. They then undergo a cold anaerobic fermentation in a pressurised, oxygen-free environment before being slowly dried on raised African beds for 15–20 days.
The result is a vibrant and expressive cup, combining generous fruit and sweetness with floral delicacy and a subtle wine-like quality. It’s a coffee that showcases both the distinctive character of Ethiopian coffee and the possibilities created by contemporary fermentation techniques.

Brew It Right
All coffees are sold exclusively as whole beans.
Grinding just before brewing preserves aromatics, structure, and clarity in the cup. For that reason, JONNY does not offer pre-ground coffee.
If you don’t yet own a grinder, consider this your sign. A proper grinder will elevate your coffee more than almost any other tool. (You’ll find a curated selection of hand grinders here.)
In the meantime, make friends with your local barista and ask them to grind the beans for your preferred brew method. They’ll understand.

Freshness, With Intention
Every coffee lists its roast date. I am committed to offering beans at their optimal drinking window. Freshly roasted coffee needs time to rest:
• Filter coffee is typically best starting 7 days after roast.
• Espresso benefits from 10–14 days of rest for balance and stability.
Coffee remains vibrant for several months when stored properly, but for peak clarity and sweetness, I recommend enjoying it within 4 months of the roast date. To maintain high standards:
• Coffees that reach 6 weeks from roast are offered at a reduced price.
• Coffees that reach 12 weeks from roast are removed from inventory.
This ensures that what arrives at your door reflects the level of quality I stand behind.
