Bright, juicy and wonderfully aromatic, UBA Orange is one of those coffees where the fermentation makes itself known without overpowering the coffee underneath. Ripe peach and sweet mandarin lead the cup, while a delicate Earl Grey character brings a floral, tea-like elegance. Expressive and tropical, but remarkably clean and composed.

Roaster’s Description

Finca Milán is located in Betulia, in the Arabia district of Pereira, where the Madrid family has been growing coffee since 1982. Across their farms, they cultivate varieties including Pink Bourbon, Purple Caturra, Caturra, Colombia and Castillo Naranjal, combining traditional washed and natural processing with more experimental fermentation techniques.

UBA Orange uses Café Uba’s culturing fermentation method. The coffee is fermented for more than 144 hours under restricted oxygen with a fruit must made from orange and pineapple, alongside selected yeasts and bacteria. This controlled mixed fermentation encourages complex metabolic reactions, creating a distinctly sweet and fruity profile with smooth tropical character.

MAME works closely with Café Uba because the same family oversees the entire process, from cultivation through fermentation. Three generations of the family now grow coffee across four sites around Pereira, supported by their dedicated La Riviera processing facility, where they have the space to develop and refine experimental methods. Their approach also extends to the surrounding ecosystem, protecting natural springs and maintaining corridors of guadua bamboo for local birds and wildlife.

Brew It Right

All coffees are sold exclusively as whole beans.

Grinding just before brewing preserves aromatics, structure, and clarity in the cup. For that reason, JONNY does not offer pre-ground coffee.

If you don’t yet own a grinder, consider this your sign. A proper grinder will elevate your coffee more than almost any other tool. (You’ll find a curated selection of hand grinders here.)

In the meantime, make friends with your local barista and ask them to grind the beans for your preferred brew method. They’ll understand.

Roast Date & Freshness

Freshness, With Intention

Every coffee lists its roast date. I am committed to offering beans at their optimal drinking window. Freshly roasted coffee needs time to rest:

• Filter coffee is typically best starting 7 days after roast.

• Espresso benefits from 10–14 days of rest for balance and stability.

Coffee remains vibrant for several months when stored properly, but for peak clarity and sweetness, I recommend enjoying it within 4 months of the roast date. To maintain high standards:

• Coffees that reach 6 weeks from roast are offered at a reduced price.

• Coffees that reach 12 weeks from roast are removed from inventory.

This ensures that what arrives at your door reflects the level of quality I stand behind.
