A luminous and aromatic Ethiopian coffee where stone fruit sweetness meets vibrant citrus. Juicy mirabelle plum brings a soft, honeyed fruit character, lifted by the floral citrus notes of bergamot and the bright freshness of orange zest. The honey process adds an enveloping sweetness and silky depth, balancing the coffee's lively acidity without diminishing its clarity. Expressive, elegant, and wonderfully fragrant, with a finish that feels both juicy and refreshing.
Roaster's Description
In the highlands of Bensa, in the village of Alo, producer Tamiru Tadesse creates some of Ethiopia's most sought-after coffees. This lot undergoes a 48-hour anaerobic honey fermentation designed to intensify its aromatic character while preserving the distinctive qualities of its origin.
The cherries are carefully selected before fermenting for two days in an anaerobic environment, allowing an intense spectrum of aromas to develop under controlled conditions. Following fermentation, the coffee is depulped and slowly dried on African raised beds, with part of the mucilage left intact to enhance sweetness.
This coffee is produced as part of the DIGS Project, an initiative focused on highlighting exceptional producers and lots through greater traceability, innovative processing techniques, and fairer compensation. The project supports producers as they experiment with modern processing methods while preserving the identity of Ethiopia's individual terroirs and local coffee varieties.
In the cup, the result is remarkably bright and expressive. Mirabelle plum, bergamot, and orange zest intertwine to create a vibrant aromatic profile, while an enveloping sweetness supports an acidity that is lively yet beautifully controlled.

Brew It Right
All coffees are sold exclusively as whole beans.
Grinding just before brewing preserves aromatics, structure, and clarity in the cup. For that reason, JONNY does not offer pre-ground coffee.
If you don’t yet own a grinder, consider this your sign. A proper grinder will elevate your coffee more than almost any other tool. (You’ll find a curated selection of hand grinders here.)
In the meantime, make friends with your local barista and ask them to grind the beans for your preferred brew method. They’ll understand.

Freshness, With Intention
Every coffee lists its roast date. I am committed to offering beans at their optimal drinking window. Freshly roasted coffee needs time to rest:
• Filter coffee is typically best starting 7 days after roast.
• Espresso benefits from 10–14 days of rest for balance and stability.
Coffee remains vibrant for several months when stored properly, but for peak clarity and sweetness, I recommend enjoying it within 4 months of the roast date. To maintain high standards:
• Coffees that reach 6 weeks from roast are offered at a reduced price.
• Coffees that reach 12 weeks from roast are removed from inventory.
This ensures that what arrives at your door reflects the level of quality I stand behind.
