Origin, Process, and Tasting Notes

Description

200g bag

Origin: Costa Rica

Producer: Hellen Mora, Agro-Hellena V

ariety: Caturra

Process: Anaerobic Natural

Tasting Notes: Cacao, Black Cherry, Panela

Roasted for: Espresso

Roast Date: 02 September 2026

A bold and deeply expressive Costa Rican espresso with a rich, fruit-driven profile. Juicy black cherry leads the cup, layered over elegant cacao and the deep, caramel-like sweetness of panela. Anaerobic fermentation adds a distinctive funky character and intensity, while a creamy texture gives the espresso weight and balance. Complex, vibrant, and confidently unconventional, this is a coffee for those who like their espresso with plenty of personality.

Roaster's Description

Located at 1,700 meters above sea level in the mountainous region of Tarrazú, Costa Rica, Agro-Hellena is led by Hellen Mora, the third generation of a family of passionate coffee producers. Founded in 2015 by Don William Mora Moreno, the farm covers 45 hectares, half of which is maintained in its natural state to preserve the local ecological balance and microclimate.

Guided by a deep respect for nature, the Mora family focuses primarily on natural and anaerobic processes. These methods help minimize water waste, while coffee by-products are composted and returned to the soil, creating a more circular approach to production. This anaerobic natural Caturra showcases both the ambition and technical expertise of the Mora family.

In the cup, it delivers an intensely fruity and fermented profile, driven by vibrant black cherry and the depth of elegant cacao. A creamy texture and notes of panela add sweetness, structure, and balance. Expressive, funky, and captivating, this is a coffee that embraces the more adventurous side of fermentation while maintaining a beautifully composed cup.

Whole Bean Only

Brew It Right

All coffees are sold exclusively as whole beans.

Grinding just before brewing preserves aromatics, structure, and clarity in the cup. For that reason, JONNY does not offer pre-ground coffee.

If you don’t yet own a grinder, consider this your sign. A proper grinder will elevate your coffee more than almost any other tool. (You’ll find a curated selection of hand grinders here.)

In the meantime, make friends with your local barista and ask them to grind the beans for your preferred brew method. They’ll understand.

Roast Date & Freshness

Freshness, With Intention

Every coffee lists its roast date. I am committed to offering beans at their optimal drinking window. Freshly roasted coffee needs time to rest:

• Filter coffee is typically best starting 7 days after roast.

• Espresso benefits from 10–14 days of rest for balance and stability.

Coffee remains vibrant for several months when stored properly, but for peak clarity and sweetness, I recommend enjoying it within 4 months of the roast date. To maintain high standards:

• Coffees that reach 6 weeks from roast are offered at a reduced price.

• Coffees that reach 12 weeks from roast are removed from inventory.

This ensures that what arrives at your door reflects the level of quality I stand behind.

Returns & Refunds
