A warm and fruit-forward Colombian espresso from Nestor Lasso, balancing the sweetness of ripe peach and dried apricot with a rich, rounded hazelnut character. The controlled anaerobic fermentation brings depth and aromatic complexity while maintaining a clean, harmonious cup. Sweet, expressive, and beautifully balanced, with a comforting nuttiness that makes it particularly inviting as espresso.

Roaster's Description

Nestor Lasso has become one of Tanat's essential producers. A visionary third-generation coffee farmer, he has gained international recognition at a remarkably young age for his progressive approach to processing and his constant pursuit of quality.

At El Diviso, careful processing begins immediately after harvest. The cherries are first floated in water to remove imperfect fruit before being meticulously sorted and disinfected. They then undergo a 24-hour oxidation phase before being depulped. The coffee is subsequently placed into a controlled 72-hour anaerobic fermentation. By removing oxygen from this stage of the process, Nestor is able to develop greater aromatic complexity while carefully controlling the fermentation. The coffee is then washed and dried in the sun for approximately ten days, until it reaches optimal stability.

Through his precise approach to fermentation and processing, Nestor creates a cup that is fruity, harmonious, and warm, offering a clear expression of both his distinctive style and technical expertise.

Brew It Right

All coffees are sold exclusively as whole beans.

Grinding just before brewing preserves aromatics, structure, and clarity in the cup. For that reason, JONNY does not offer pre-ground coffee.

If you don’t yet own a grinder, consider this your sign. A proper grinder will elevate your coffee more than almost any other tool. (You’ll find a curated selection of hand grinders here.)

In the meantime, make friends with your local barista and ask them to grind the beans for your preferred brew method. They’ll understand.

Roast Date & Freshness

Freshness, With Intention

Every coffee lists its roast date. I am committed to offering beans at their optimal drinking window. Freshly roasted coffee needs time to rest:

• Filter coffee is typically best starting 7 days after roast.

• Espresso benefits from 10–14 days of rest for balance and stability.

Coffee remains vibrant for several months when stored properly, but for peak clarity and sweetness, I recommend enjoying it within 4 months of the roast date. To maintain high standards:

• Coffees that reach 6 weeks from roast are offered at a reduced price.

• Coffees that reach 12 weeks from roast are removed from inventory.

This ensures that what arrives at your door reflects the level of quality I stand behind.
