In 2005, after years of delivering their cherries to a cooperative, they established their own micromill, Las Lajas, giving them greater control over both quality and processing.\u003c\/p\u003e\n\u003cp\u003eTheir early experimentation helped establish Honey and Natural processing in Costa Rica. When an earthquake in 2008 left the farm without electricity and water during harvest, Francisca drew inspiration from African coffee production and began drying whole cherries on raised beds. What began out of necessity became another defining part of Las Lajas’ approach to coffee.\u003c\/p\u003e\n\u003cp\u003eToday, Oscar and Francisca continue to experiment with different Honey processes, carefully adjusting drying techniques to shape the final cup.
