Located in the biodiverse hills of Acevedo, Finca Anaya is recognized for its meticulous agricultural standards and progressive fermentation work.

The coffee is processed using a washed method with controlled fermentation. After selective hand-picking, the cherries undergo a short whole-fruit fermentation before depulping and a 48-hour submerged fermentation with selected yeasts and a fruit-based pre-ferment. Parameters including pH, Brix, TDS, and temperature are carefully monitored throughout. The coffee is then washed with temperature-controlled water and slowly sun-dried for 8 to 12 days, resulting in a cup of remarkable clarity and sweetness.

//cdn.shopify.com/s/files/1/1028/6550/2533/files/JONNY-Pier-Coffee-Pacamara-Amarillo_ca717825-632e-4e0e-8654-d2c9d79eea75.jpg?v=1784719176
